How To Cook Chicken Thighs On Stove

Once the fat has rendered properly you will be able to move the chicken around as you wish.
Don t move the chicken in the pan for the first 5 minutes or so or you might break the skin. Add chicken thighs and cook for 4 minutes per side until golden brown and crispy on the outside. Cook the chicken on the skin side for 10 to 12 minutes or until the skin is deeply golden. Preheat a cast iron or non stick pan over medium high heat for 2 minutes with 1 tablespoon of oil.
Do not move the chicken thighs around. Sprinkle the other side of the thighs and then without moving them cook uncovered for about 20 25 minutes. A thermometer inserted into the thickest part of the meat reads 165 f. Cook the chicken thighs over medium high heat.
Flip chicken to the other side and pan fry for another 3 minutes. Place a large iron skillet over medium high heat then add oil until hot. Let cook for 5 minutes or until you can easily flip them over. Heat oil in a cast iron skillet on the stove top over medium high heat.

Flip and cook another 3 4 minutes. Cook s notes for stove top chicken thighs. Once again don t touch the chicken thighs once they go in the pan let them get nice and crusty. Generously sprinkle the skin side of the chicken thighs with spices and then place them in the hot skillet skin side down.
Add the chicken thighs skin side down and pan sear for 3 minutes untouched until the skin is nice golden crispy and no longer sticking to the pan. Remove from the pan and let the meat rest for 5 minutes then serve with a drizzle of lemon juice.
