Slice the onions and peppers into thin slices.

Spray a 9x13 baking dish with non stick cooking spray. Cut the onion and bell peppers into 1 4 inch wide strips. Pour spice mixture over the chicken mixture and toss to coat everything well. Cook and stir seasoned chicken until browned about 2 minutes per side.

Serve filling warm in warm tortillas with desired toppings. Drizzle lime juice evenly over top of the chicken fajita filling sprinkle with cilantro and more salt to taste and toss to coat. Stir until chicken and vegetables are evenly coated. Preheat the oven to 400 degrees. Top with remaining fajita seasoning mix and vegetable oil. Stir to coat spreading mixture evenly in pan.
