Cook garlic until fragrant and golden.

Cut turnips greens into small pieces. Bring to a boil. Drain reserving 2 tablespoons of drippings. Chop greens and wash thoroughly two to three time to insure no grit.

To the salt pork and onion add the water cleaned turnip greens black pepper salt and the sugar and crushed red pepper flakes if using. The diced turnip root adds color flavor and texture to the greens. Instead of using olive oil you could use bacon grease to add more flavor. Add the chopped onion and cook for 2 minutes longer.

Cook stirring often until greens become darker in color and tender about ten minutes. Turn down heat to medium medium high and add the ginger tossing until fragrant 1 minute. Place water in a large pot with lid and bring to a boil. Boil on simmering heat for approximately one hour.

Remove and drain on paper toweling. Add the turnip greens and cook until wilted and tender. Cover and simmer for 45 minutes or until greens are tender. Taste broth and season with salt black pepper.
