How To Cook Eggplant On The Grill

Grill your eggplant slices.
Crush the garlic finely chop the parsley. For an extra thick batter coat each piece in egg and flour then coat them a second time in egg and flour. Leave the grill uncovered and cook for about 8 10 minutes turning occasionally until the center is soft and the skin is crisp. Place the eggplant directly on the grill grates and grill for about 4 to 5 minutes per side 8 to 10 minutes total until charred and tender.

Larger eggplants should be cut crosswise to a thickness of about 3 4 inch. To cook eggplant in the oven preheat the oven to 475 f toss brush or drizzle your cut eggplant with olive oil and place in a single layer on a baking sheet.
