How To Cook A Filet Mignon Steak

You can cook up to 2 filet mignon steaks in a medium sized skillet at a time.
Add the olive oil when it s fully heated. Now place the filet mignon in the searing hot pan. Leave the steaks undisturbed for 4 minutes to sear the bottom sides. Cook until very seared.
Season the filet mignon steak with sea salt flakes and ground black pepper set aside. Add the filet mignon on the skillet and pan sear for 3 minutes. Cook the steak 3 minutes per side or until it develops a beautiful brown crust. Do not touch the steak while sauteing until 4 minutes have passed for an even sear.
Add the grapeseed oil. Turn the steak over and allow it to sear for another 3 4 minutes. Grapeseed oil canola oil ghee duck or pork fat are good choices. Heat a medium oven safe stainless steel or cast iron skillet over high heat for 5 minutes.

Line the steaks side by side in the skillet coating the bottom in olive oil. Preheat oven to 400. Generously season all sides of the filet mignon with salt and pepper. Lay the filet mignons down in the pan and let them sear on that side for 3 4 minutes depending on thickness.
Heat up a cast iron skillet on high heat. Skip the oven and simply pan fry the filet mignon in a skillet on the stovetop about 3 to 8 minutes per side. On a cutting board pat the filet mignon dry with paper towels and let sit at room temperature for 20 30 minutes. Turn over and pan sear the other side for another 2 3 minutes.
Just let it sear. When oil is just about to smoke add steak. Do not turn over.
